OK, this might look complex and complicated, but actually both of these dishes are really quick and easy to put together.
This is what I call a delicious mess – left over Saag Paneer from last night, and a quick Chicken Curry that I whipped up in 20 min over lunch.
Saag Paneer is one of my favourite curries – it’s basically a type of soft Indian cheese cooked in spinach with loads of delicious spices. I’ve always wanted to make it but was intimidated by the fact that it’s almost impossible to find this cheese in Berlin. So when I saw this version by Priya Krishna with feta on Bon Appétit, I was sold. I HAD to make it.
It was really easy to make, and oh my God – it’s delicious.
The rich flavour comes from all the beautiful spices it – sautéed coriander seeds, cardamom, chilli, fresh ginger, & buttery crunchy cumin seeds on top. I am seriously blown away by how good this was!
I know what you’re thinking – ‘“easy” she says , with all these spices?!’ – trust me, there is NO BETTER INVESTMENT that you can make for your kitchen than A BOX FULL OF SPICES. They cost about 2€ per bag at your local market and last you FOR YEARS! You would be surprised how many new recipes you’ll be able to cook all of a sudden. You can thank me later.
This Saag Paneer with Feta had become one of the favourites dishes at my house at the moment. You can see the full recipe here, and also there is even a video with Priya taking you step by step on how to make it (just love Bon Appétit).
The chicken curry in here is even more simple and really nice as well. I saw the recipe today on the Netflix show Nadiya’s Time to Eat – where Nadiya Hussain talks about quick and easy, mouthwatering recipes.
In the original recipe Nadiya uses jackfruit, I used chicken because who knows where one can get jackfruit in Berlin?? is really super simple – just some onion, garlic, ginger (the basis to almost every curry out there), a few spices and that’s it.
Literally took me 20 min to make it and tastes better than any takeaway.
If you read until here then I hope that I’ve managed to inspire you to cook more 💛 I‘m happy to hear your thoughts ☺️
