Whole Roasted Cauliflower with Tahini Sauce

Trust me, you haven’t really eaten cauliflower until you’ve eaten it this way.

This is one of the best and simplest ways to enjoy cauliflower in my opinion. It also happens to be vegan – so it serves as a great, healthy alternative to meat. Plus, did you know that cauliflower has only 25 calories per 100g?

Since this recipe is so simple and only relies on few ingredients, the key here is to have the best quality olive oil & tahini.


Ingredients

Makes: 2 portions
Time: 60 – 80 min

For the cauliflower:
1 whole cauliflower
1 – 2 tbsp good quality olive oil
Freshly cracked sea salt & pepper

For the Tahini Sauce:
4 – 6 tbsp good quality tahini (I use @alkanater)
2 – 4 tbsp mineral water
1 small crushed garlic clove
A squeeze of fresh lemon juice
Salt & Pepper


Instructions

Boil water: Bring a large pot of salted water to boil.

Clean the cauliflower: While the water is boiling, wash the cauliflower & carefully cut of the leaves (make sure the cauliflower stays whole).

Cook: Place the cauliflower in the pot (the water should cover at least 3/4 of it), and boil in for 12 – 17 min, depends on the size. If you stick a knife through, it should feel soft but still give a little resistance.

Once the cauliflower is ready, take it out and let it cool and dry a little.

In the meantime, preheat the oven to 220°c on the fan mode.

Roast: Once the cauliflower is cool and dry, using your hands or a brush rub it thoroughly with 1 – 2 tbsp olive oil, then sprinkle with 1/2 tsp freshly cracked pepper & 1 tbsp sea salt. Place on a baking tray stem side down, and bake for 30 – 40 min until completely golden and some brown edges have formed.

Make the tahini sauce: While the cauliflower is cooking, mix 4 – 6 tbsp tahini, 2 – 4 tbsp mineral water, 1 small crushed garlic clove, a squeeze of fresh lemon juice, and salt & pepper in small bowl until smooth. Adjust the water until you get the right consistency – you want the tahini to become lighter, but still keep some shape.

Serve: Pour the tahini sauce on a plate in a circle, and place the ready cauliflower direct on top. That’s it!
